About Our Local Meat

Schmidt Family Farms is located in Cuba, Missouri. We raise only grass-fed and grain-finished, All-Natural Angus & Angus Cross Cattle as well as Pigs and Chicken and process superior meat with quality as our number one goal.

Beef

Pricing based on hanging weight (carcass with head, hide and guts removed)
All beef is dry aged 7 to 14 days before processing. This is to evaporate some of the moisture and let the enzymes start breaking down the meat, this process makes the meat more tender and flavorful. Be careful the meat cooks much faster because of the moisture evaporation. Grocery store meat is wet aged in a sealed plastic bag and has much more moisture, therefore takes longer to cook.

1/4 Beef

175-200 pounds hanging weight @ $5.75/pound = $1000-$1150

  • 6 Bone-in Ribeye steaks (1″ thick)
  • 6 T-bone steaks (1″ thick)

Parts of the pork are cured and smoked for great flavor.
But all of the cuts including the cured ones need to be cooked by the customer.
Cured cuts include ham, bacon and hocks.
